This whole day got off on the wrong foot. My eyes just would not adjust to the light this morning, and in rubbing them I managed to scratch up my left. I’ve been tired all day. Very much looking forward to sleeping in tomorrow.

But other than feeling off, my day wasn’t bad at all. I had productive meetings at work. My leftover salmon salad made an excellent lunch. I improvised a very tasty coconut curry sauce. Olivia is snuggled up next to me as I write. So many good things.

Also, the Bluechai tea I ordered arrived with nifty German airmail postmarks!

I can’t wait to try to color-changing tea trick! I’ll take pictures tomorrow when the sun is up.

Whole30 Menu: Day 13

Breakfast:

  • Prosciutto egg cup
  • Fresh pineapple

Lunch:

  • Baked salmon
  • Spring greens salad with Tessamae’s Cracked Pepper vinaigrette
  • Strawberries, kiwi slices, and blueberries

Snacks:

  • Sea salt plantain chips

Dinner:

  • Chicken and vegetables with coconut curry

For the curry, I sauteed garlic, onions, and a bit of jalapeno with coconut oil in a saucepan. After a couple minutes, I added chopped broccoli, cauliflower, mushrooms, and asparagus. Squeezed the juice of half an orange over the veggies and cooked until crisp-tender. Stirred in someĀ ancho chili powder, curry powder, and some kosher salt, then added the coconut milk. Brought everything to a simmer, then kept covered on low heat until the chicken was done. It was the perfect combination of spicy and sweet, even if it wasn’t thickened at all since anything you’d normally use for that is verboten on Whole30. So maybe it was thinner than is normally ideal, but it was damn tasty.

How do I feel?

I pretty much covered this in the opening, but I felt tired and a little run down for the first time since I started Whole30. I haven’t had any slips, and I don’t seem to be getting sick, so I’m guessing this is more of a hormones/cycle thing. A good night’s sleep should work wonders.
