I had to run out to the grocery store to pick up some grape tomatoes and mini sweet peppers, and while I was there I also ended up with a bouquet of tulips that are just the perfect delicate shade of pale pink. I’m not a “pink” girl, really, but these are just beautiful, and in a vase on my table next to all of my fruit, it makes for a very pleasing tableau – even if  it’s obvious that I need to get myself a proper fruit bowl.

It was a busy afternoon in my kitchen, and I’m sure that running the oven helped keep the apartment warm. The sweet potato chili that I had to bail on yesterday went into the slow cooker this afternoon. It was delicious, and perfectly warm and hearty for a cold day with snow on the way.

I also made a fresh batch of prosciutto egg cups and used the last of my homemade mayo with some curried chicken salad. Together with the sweet potato chili leftovers, it should be a pretty good week for sack lunches!

 

In coffee news, I remembered that I have a can of Intelligentsia medium roast coffee in the fridge that I make from time to time with a pour-over filter, so I gave that a try today. I was right, the french roast is just too bitter to drink black, but I could actually taste the good quality medium roast.

Overall, it was the “knit and binge-watch Battlestar Galactica” day that I expected to have yesterday. I hung out in leggings and a hoodie, got a lot done in the kitchen to prepare for the week, and even made a bit of progress on my Speckled Space Socks.

Whole30 Menu: Day 8

Breakfast:

  • Prosciutto egg cup
  • Blueberries, blackberries, and a single raspberry

Lunch:

  • Rosemary baked chicken breast
  • Mushrooms roasted with lime juice and cayenne
  • Fresh pineapple

Snacks:

  • Apple slices with almond butter
  • Manila mango
  • Handful of plantain chips

Dinner:

  • Sweet potato chili
  • Avocado slices

How do I feel?

Oh hey, I have stuff to report other than “I dunno, I feel fine!”

First update:
I weighed myself this morning to see what a week of Whole30 has done. I lost 4 lbs. I’m almost certain most of that was water, but it confirms the whole “I feel less gross and puffy” bit. It will be interesting to see if that continues through weeks 2-4.

Still, I’m kind of impressed by a 4 lb. weight loss for two reasons:

  1. I am not counting calories or measuring portions. I’m literally just eating whatever, so long as it’s compliant with the rules. Obviously, cutting McGriddle breakfasts and all of the soda has a big impact on my caloric intake. Still, damn.
  2. I have no exercise regimen to speak of. Although I walk roughly 2 miles on weekdays for my daily commute, beyond that I’m pretty couch potato-ish at the moment.

Second update:
Holy rosacea flare up! I caught myself in the mirror after dinner and my cheeks were bright red. Now here’s the kicker: I have no idea what might have caused it. Comparing my meals today to a list of rosacea food triggers, it could be the avocado at dinner, the pineapple from lunch, or even the mushrooms according to one list I saw. The confusing thing is that there’s nothing in anything I ate today that I haven’t already had during my Whole30 run to date, but this is the first time it’s happened. Maybe it was all three suspects combining to hit some kind of critical mass. I did use mushroom broth in the sweet potato chili, so maybe I went over some mysterious quota there after also eating whole mushrooms as a side for lunch? I don’t know. But wow are my cheeks bright red, maybe even slightly warm and itchy. That sounds like an avocado reaction, doesn’t it? I have no idea.

So that’s where things stand heading into week 2: I’m 4 lbs. down, and I have no idea what the hell triggered a rosacea flare today, but I still feel pretty good.
